Thanksgiving Cooking Schedule: Day Before and Day Of, One Oven

The short answer

With one oven, Thanksgiving is a scheduling job. The turkey holds the oven for most of the day, so everything that bakes either goes in on Wednesday or waits for the 30 minutes the turkey rests. For 14 guests and dinner at 4 pm, an 18 lb turkey goes in at 11:15 am and the pies, cranberry sauce and prep are done the day before. The amounts come from the Thanksgiving dinner calculator.

Stuffing and casseroles bake while the turkey rests; if a recipe needs longer than 30 minutes, bake it in the morning before the oven goes to 325°F and reheat it to 165°F.

For 8 guests the oven is free for 4 h 10 min in the morning; for 18 it is 2 h 10 min, so with a big bird do all the baking on Wednesday. For an earlier dinner, move every time back by the same amount.

If you want leftovers, choose 1.5 lb a person in the turkey size calculator: 14 guests then need a 21 lb bird instead of 18 lb. Whichever you buy, plan its thaw and its oven time from its own weight.

After dinner

  • Refrigerate the leftovers within 2 hours of cooking, in shallow containers. USDA says leftovers keep 3 to 4 days in the refrigerator, so eat or freeze them by Monday, November 30.
  • Reheat leftovers to 165°F.
  • Freeze turkey you will not eat in time; take the meat off the carcass first.
